About Us

Amanda has a degree in International Hospitality Management and over 30 years working in the industry and has definitely worked her way from the bottom up...and all around… with lots of travelling and lots of life experience. 

​

She has been cooking professionally for over 20 years now and still loves the creativity and occasional drama that catering offers.  She has been largely involved with researching the (sometimes seemingly endless) paperwork and management of the business.

​

She spends most time, when not chopping, shopping and cleaning,  on working with and finding great suppliers and creating new menus to tempt you all.

​

Amanda likes to play with fire! Griddling, searing, chargrilling, roasting, slow-cooking and home-smoking…and working with seafood, fish and game, and all the gorgeous sauces to accompany.

Aart, originally from the Netherlands had a first career in landscape gardening & design.  He is a hugely talented carpenter, joiner, general handyman and all-round DIY hero. He combines practical with beautiful and  has something of  a passion for upcycling, renovating and recycling. He has his dream (messy...) workshop in the back garden, where he can be found when not in the restaurant!

He looked after the renovation of the Gille Brighde and keeps  our business a lovely, rustic little gem! His can-do attitude and apparently endless talents (!) led to him developing his passion for cooking and he too has gained Professional Cookery qualifications.

​

He is the master baker of the Gille Brighde, and definitely supports the ‘little bit of what you fancy doing you good” adage.

​

Aart is also a huge fan of Scotland’s Real Ales and Malt Whiskies – and has worked hard to find a selection of these that sit well with our menu and our ethos. Yummy.

Okay so they are more of team morale thing, and really not much help in the restaurant, but they are our fab furry friends who make us laugh, walk, throw sticks and feed treats every day. The good girls!
