The Gille Brighde is our lifestyle, a business that sits well in its environment and we are careful with our impact on the land we love.
As we settle here we try to bring something special to the area – a sustainable, ethical and small scale resting spot for people to explore and appreciate all that is around.
We source locally and believe in sustainability. Small independent producers, suppliers and service providers that share the vision of high quality, small-scale are people we like to work with. We source as much as possible from our doorstep and the majority from Scotland at least. Sadly we cannot find lemons or olives that grow here (yet!) but when further afield we still apply the basics…independent, cared for, careful and we use Scottish wholesalers.
It takes time to build these relationships but that’s all part of the fun – some of our suppliers have been with us for years – no matter where we go, and some we will find along the way. We taste our food, we eat it! We choose our products because they are good, not fashionable or clever – just good. Then we apply a little creativity and imagination and let it do the rest of the talking.
Fresh meats, fish and seafood are prepared with care and set upon sauces and sides that creatively compliment or are reassuringly familiar but always beautifully presented. Non-meat dishes are always treated with the same love and care. Why not?
All our desserts, puddings, cakes and bakes are homemade…always. Aart is our master baker and currently working on a variety of homemade breads. (In between the DIY of course, apparently it relaxes him!)
We are very passionate about Scotland and its wild beautiful landscapes, it’s amazing flora and fauna and of course the goodness of its larder.
