Aart & Amanda Lastdrager
Amanda (passionate red-head, fiery but friendly foodie…) is a born and bred Scot with a love of her country rediscovered, after much globe-trekking, especially since meeting ‘The Dutchie’ Aart.
She has been in the hospitality industry all her life and is a largely self-taught chef although has student- hazed vague recollections of knife skills and City & Guilds certificates back in the day….
Fully qualified in International Hospitality Management (this essentially means she speaks rusty Spanish, French & Italian, even worse Gaelic and can do a terrible German accent BUT can say ‘cheers’ to practically anyone! ) with a background in the non-corporate and off-beat side of catering.
She has been obsessing about food most specifically in the last 17 years.
Aart (gentle viking, pirate, hairy baker…) is originally from Holland but is now a bonafide honorary Scot. He is a landscape gardener by trade, specialising in hard landscape and structure design and build. He is responsible for the renovation of the Old Schoolhouse here at Lower Diabaig. He has brought it back to life with a rustic charm that reflects the surroundings, our passion for low impact sustainable living and our love of hospitality.
He has always been a keen ‘hobby cook’. He undertook his professional chef award in 2007 and has a great passion for all things cakey!
Our first Gille Brighde Restaurant was on the Isle of Canna where we lived until 2012.
We spent 3 years on this tiny remote island and made a great success of the business, as well as experiencing life within a tiny, very fragile community. It most definitely whetted the appetite to be somewhere we could put down roots, work towards our lifestyle business and be part of a forward thinking, like minded and friendly community.
When the chance to start again here in Lower Diabaig in 2014 presented itself, we couldn’t resist!
Together we make a great team – we have a genuine passion for local, ethical and sustainable living, we do everything we can to work with & support other small businesses in the area and we love being able to create an unforgettable experience for visitors to the Gille Brighde Restaurant in this stunningly beautiful part of Scotland.
We are so happy and privileged to meet up with old friends and seeing familiar faces here again, but we are really excited about meeting new folk along the way …
